Looking for something fun to do tonight? Seven Minus Seven is having a gallery opening at 7 pm this evening and Eric and I are going to check it out. Our friend Devin will have some art hanging on the walls and said there will be a great band playing, sounds promising!!  It's been since NYC that I've been to a gallery opening so I'm really excited to see this show.

Truth be told I've got a salt problem and anyone that lives on the NorthSide of St Thomas knows what I'm talking about. The humidity level is so high where I live that no matter how much rice you add to any saltshaker you will still not be able to shake salt with ease. That's why I'm so excited that I found this little handmade saltshaker that works!

I found this saltshaker at a shop downtown called  Gallery St Thomas, it's made by Kazooti Clay USVI, they call it The Salt Vault. The reason that it works is because it's made out of clay and it's not glazed on the inside; since the clay is porous it naturally absorbs the extra moisture in the salt and allows it to shake with ease. So simple, yet brilliant!

Last week I made Eric a Chocolate Cake for his birthday, he loved it!!!
My mom brought me down 'The Good Housekeeping Illustrated Cookingbook' from Maine and I used this recipe in the book:

2 cups of flour
1 3/4 cups sugar
3/4 cup cocoa
1 1/4 cups milk
3/4 cup butter
3 eggs
1 1/4 teaspoons baking soda
1 teaspoon salt
1 teaspoon vanilla extract
1/2 teaspoon double acting baking powder

oven temp 350 degrees for 40 minutes.

I also used the frosting recipe from the cookbook, but I altered it sooo much that it's not worth telling you about it, so I'm in need of a yummy chocolate frosting recipe.

Monday's always come to soon; how was your weekend? I didn't make a lot of fun photos this weekend, but I did do a lot of eating out. I met up with a friend over at Cajun Karl's in Mandahl for lunch on Saturday, had dinner with the family out at The Grill, and grabbed a couple of sushi rolls at Coco Blue for Sunday happy hour before the parking lot party at XO in Redhook.

I woke-up this morning thinking about whales (they must have been in my dreams.) Have you ever swam with a whale? Swimming with a whale is on my list of things I must experience in my lifetime. The second photo is called 'Valley of the Whales,' I've never seen anything like it. The photograph was made in an Egyptian desert and the whales date back more then thirty-seven million years, wow!!! Take a look at the full story HERE.

I made this video the other day with my phone while I was waiting for the ferry back to St Thomas in Cruz Bay on St John. It's the one part of my commute to work that I really enjoy, but it's the weekend and I don't have to work this weekend, YAY!!! Do you have any fun plans for the weekend? I'm not sure what I'm going to do but I did hear that there is a parking lot block party with live music out in Red Hook to raise money for the Virgin Islands Horses Retirement (might be fun!)

Last week while I was 'playing tourist' with my family we visited the St Peter Great House on the north side of St Thomas. They have a short nature walk (like in the photo directly above) that meanders through a tropical botanical garden where I made the photos above. My family loved being able to see all the plants, flowers, and birds within the garden.

It was 30 something years ago today that the man of my dreams was born! We're going to spend the day doing whatever the birthday boy feels like, enjoy a fancy dinner out, and eat some yummy chocolate cake that I baked at home (I'll update you all later on the chocolate cake recipe that I went with and if it's a keeper.) I can still remember the first birthday that we celebrated together; we rented a tent at Cinnamon Beach on St John and fell asleep on the beach! Is there something special that you like to do for your birthday celebration?

How was your weekend? I didn't leave the house on Saturday. Sunday afternoon was simply lovely with friends on a private beach, a picnic, a small sailboat, and the sunsetting. Hope everyone has a wonderful week.




Eric's birthday is this week (YAY!!!) and he asked me to bake him a chocolate cake. Do you have a favorite chocolate cake recipe that you could recommend I try? I'm looking for something that's not too fancy and doesn't have anything too difficult to find  like 'self-raising flour' cause I'm sure there isn't any on St Thomas ;) Any suggestions will be much enjoyed!!!

It's funny how a cold can make you so grateful for the simple things in life.... like being able to breath out of both nostrils. I didn't realize it until now but I haven't had a cold in years, yet another reason to live in the Caribbean, it's safe from all the people with runny noses in the north. I'm actually looking forward to a Monday cause I think I will be back to my normal self!!! Hope everyone's having a great weekend and breathing freely.
