This week I've heard St Thomas referred to as Never Neverland on multiple occasions - how appropriate!!! In one way or another we are all on a permanent vacation here on island and this is something I plan on taking full advantage of in the next week while I have a friend visiting. I'm looking forward to showing my friend all that the island has to offer and remembering why I love living on St Thomas. What is the one thing you always do when friends come to visit?

Have you eaten at Pesce's restaurant on the east end of St Thomas? It's my new favorite place for Sunday brunch on St Thomas. They have a Build your own Bloody Mary and Mimosa Bar that is BOTTOMLESS and an eggs benedict that is I fell in love with. Defiantly worth trying next Sunday you're on St Thomas, take a look at Pesce's menu online HERE. They serve brunch from 11:00 am till 3:00 pm.

Last week I cooked the yummiest dumplings with a soba miso soup for dinner!!!! Since I'm a little new to cooking I've noticed that it's really difficult to go exactly by a recipe, so there where a few modifications but everything tasted amazing! This is the dumpling recipe that I found on Design Sponge's blog HERE (substituted ground pork with ground turkey) and the easy miso noodle soup recipe on Steamy Kitchen's site HERE. 
This week I'm thinking Italian! I just picked up a new book called The Silver Spoon Pasta and it has some amazing recipes that I can't wait to try.

How was your weekend?
I had yet another weekend where I'm happy the weather is (almost) the same all year round here in the USVI. I'm also grateful for moments when you do something repeatedly and it still feel fresh and new - like a Saturday afternoon at Megan's Beach. I think one of the first things I did after leaving the airport when I moved to St Thomas was go for a swim at Megan's Beach (that was over 5 years ago) and I have lost count of how many times I've been to this beach, yet I still have a great time here!

Dominica is  known as the Nature Island of the Caribbean and is the destination for nature lovers, people that love to hike, scuba dive, and that are looking for an amazing relaxing Caribbean island vacation. Dominica doesn't have an international airport which makes it relatively quiet for tourist activity. Here are a few quick tips to help plan a vacation on Dominica:

Another week just flew by, wowzer!! Again I haven't made any weekend plans to do anything fun - have you made any plans? The weather seems to be nice again here on island so we might do a little beach adventure and of course I still want to get to the yoga class at the Buddha Temple on Sunday (still trying.) Did you get a chance to see the photos from last weekend HERE?

PS Don't you love the little candle my mother sent me (above photo)? They are so little and sweet - I have one on my desk while I work for a little ambiance in my office.



This morning I woke to the sound of an owl!!! I love the way an owl sounds - have you ever heard one? I've yet to see what the owls look like here in the Caribbean. It was much better than the typical bird that you hear on St Thomas in the morning - a rooster. Of course not long after the sweet sounds from the owl I heard these guys HERE. 

Last year at this time I traveled to Maine and was doing this and that. This year my family is coming down to visit me instead (way better.) I'm thinking about getting a fancy thermometer like my mom has on her deck, so I know the temperature. Do you check the temperature before going outside where you live? It feels as though it's been much cooler here in the USVI this winter.

Last weeks cooking lesson with my friend was amazing! Jane is a master baker for sure and she taught me some wonderful baking basics like how to measure flour (this might explain my failure with Popovers.) We baked a lot of bread last week: a Garlic & Olive Bread (since I'm the only one that likes olives we substituted with chopped capers), the best Blueberry Scone ever with Passionfruit Curd (out of this world yummy), a Wholewheat and Flaxseed Loaf (amazing for sandwiches), and a Yeast Coconut Bread (that I still haven't tried). I'm searching for a yummy bread recipe to try this week and also drooling over these dumplings HERE.

It was a good thing I wasn't standing where this gigantic coconut fell five feet from me!!!


Well, for not making any plans this weekend it turned out to be a lot of fun! We went to the BVI on Jon's new boat to make some photographs of it for his website and ran into a group of friends on Jost Van Dyke. On Sunday we made it out to the other side of St Thomas to the Agricultural Fair in Bordeaux - it seems to grow each year!!!
